a
time when most cookbook authors want to hide
their scale!
Jen developed these fabulous recipes (in her
books below) over the last 5 yrs. |

A common challenge
for anyone on restrictive diets is "boredom".
We simply miss our favorite foods! Another
is "Trying to lose that last stubborn 10-25lbs".
Jennifer has "been there ... done that" and
knows exactly how you feel! For almost 14 years
now, Jennifer has been writing best selling
cookbooks - which involves creating and eating
many fabulously rich desserts and main courses,
and she is living proof that eating these
fabulous meals, contained in her books, need
not interfere with our ongoing weight control
efforts, or compromise our health. Her low-carb
recipes represent a welcome breakthrough in
reducing carbs and returning many of our sorely
missed, great tasting, favorite old "comfort
foods" to us, and introducing new one's
to us. All (100%) of the recipes in these
5 books
are < 10g carbs per serving, while most
(70%) are < 5g carbs per serving and many
(40%) are < 3g carbs per
serving! After personally developing and
then consuming the 1,000's of recipes that
appear in her Low-carb cookbooks,
Jen is undeniable living-proof (click
for Before & After pics) of the
effectiveness of the low-carb-lifestyle and of
the many fine recipes that make up her
Splendid Low-CarbingTM
series of cookbooks. Not only were the above
photos of Jen taken on the day she finished "Splendid
Low-Carbing for life vol-2", but they mark
the end of nearly 18 months in which she
developed and published her last 3 cookbooks
(back-to-back) and this during a time when she
was diagnosed with Hashimoto's Thyroiditis
(Hypo-thyroid) which makes weight loss very
tough indeed! Chances are you will never see
or eat as much food as what Jen has had to
deal with in the last few years ... and just
look at her now. Jen's books ensure your diet
is not compromised!
These 5 low-carb books are really a "Journal
of what Jen (and we) ate" over the last 5 or
so years, and that resulted in her
regaining her figure. |

Low-Carbing
All 165 tasty recipes are
under 10g carbs/serving, 75% are under 5g, and 50%

recipes alone pay for this book. It features
the highly effective "Fat-fast" and is almost a
"National bestseller" as well. It's not
tough to see why so many serious low-carbers love
her books ... Jennifer takes great pains to ensure
that NONE of her recipes compromise her and their

rushed to market claiming to be full of "low-Carb"

FAQ for the Splendid Low-Carbing
Series of Cookbooks:
Book 1: Splendid Low-Carbing:
Q Does this book have an
extensive helpful hints section to help the first time low-carber?
A Yes.
Q
How many recipes are contained therein?
A 353, including variations.
Q
What are the statistics for the recipes?
A All 353 tasty recipes are under 10 g of Carbs/serving,
75% are < 5 g and 40% are < 3 g.
Q
Do all the recipes have the complete nutritional analysis
including carb counts.
A Yes, they most certainly do!
Q
Does this book use soy products?
A Yes, a little, however, excellent alternatives
are given in most every recipe, as I was aware of the fact
that many people do not like soy or cannot have it due to
an under active thyroid or underlying thyroid disease (like
myself). There are about 4 recipes in total without
alternatives. After More Splendid Low-Carbing, soy is
never used again.
Q
Do you have bake mixes in this book.
A Yes, there are several super bake mixes and also
an Ultimate Bake Mix which can be used cup-for-cup for
white flour in your own recipes.
Q
Does this book contain regular cooking recipes?
A Yes.
Q
Does this book contain a big section of desserts?
A Yes.
Q
Are other sweeteners besides Splenda Granular used in the
recipes?
A No.
Q
How many low-carb breads are in the book?
A 16 different ones, including a fabulous
Cinnamon-Swirl Egg Bread, which tastes like cinnamon buns
and is served with a lovely cream cheese frosting.
Q
How many homemade tortilla recipes are in the book?
A Two. The one is just superb-tasting and my
favorite, besides the new one that is in Splendid Low-Carbing
for Life, Volume 2. Somebody else was just as enthused and
e-mailed me specifically to ask if she could share the
recipe on a bulletin board with her friends, as she had
been raving about it, and they were begging her for the
recipe! And, yes, it is soy-free as well.
Q
Are there recipes for crackers in the book?
A 4 different recipes. Are they soy-free. Yes,
as I mentioned, one can choose to make the recipes with soy
or without. The soy-free crackers are actually nicer.
Q
What sets this book apart from other low-carb cookbooks on
the market?
A There are substantial baking and dessert recipe
sections (covering the whole gamut of dessert categories)
in the book and the recipes truly are low-carb and
acceptable on the Atkins diet and other low-carb plans. I
don’t think too many cookbooks have a Confections and
Frostings section. Each subsequent low-carb cookbook
features this section. It’s great for chocolate lovers
especially, although there are other candy recipes too and
plenty of frostings for cakes to choose from.
Q
Are there fruit spreads and other canning recipes in the
book?
A Yes, several.
Q
Is this cookbook a national best seller?
A Yes.
Q
Are the recipes outrageously high in fat and calories?
A No.
Q
Are the recipes high in sodium?
A No. Some are higher than others, however, added
salt in regular recipes can always be left out and replaced
with Mrs. Dash Seasoning blends for flavor. Typically,
recipes with lots of parmesan cheese will be higher in
sodium. I do not like high sodium recipes for the most
part, so took a middle road. Later cookbooks are also
mindful of sodium content in recipes, as my husband has
slight hypertension and I have to keep that in mind.
Q
Is this book really a complete guide for low-carb living?
A I think it’s a good overall guide and subsequent
books only complete things even more and bring with them my
years of experience with low-carb cooking and baking.
Q Does
the cookbook do away with the need for expensive products
such as ThickenThin/NotStarch, commercial bake mixes and
low-carb breads and tortillas?
A Yes.
Q
Does the cookbook still require expensive ingredients
anyway?
A Ground almonds, whey protein powder (vanilla
whey is a good price at Costco – about $20 for 1 kg), spelt
flour and vital wheat gluten are probably the more
expensive items for baking.
Q
Does Splendid Low-Carbing contain gourmet-style recipes?
A Typically, the recipes use ordinary everyday
ingredients. The recipes are a down-home type of cooking
and baking. Explicit, detailed instructions make the
recipes easy to follow.
Q
What sweeteners do you use in the cookbook.
A I use SPLENDA®
Granular.
Q
Who will this book benefit?
A This is a great cookbook for the low-carb
dieter who misses breads, tortillas, pizza and crackers,
etc. Besides the wonderful regular cooking recipes and
salads, beverages and appetizers, it has a healthy dessert
section as well.
Book 2: More Splendid Low-Carbing:
Q
What is special about this cookbook?
A This cookbook is great for people on induction
or the fat fast because 50% of the recipes are below 3
grams of carbohydrate. This cookbook also has one of my
best bread recipes in it and a deep dish pizza crust.
There are two lower carb bake mixes that only appear in
this cookbook (one contains soy and the other not).
Q
What is the fat fast? Is it mentioned in this cookbook?
A Yes, the fat fast identified by Dr. Atkins as an
alternative for people who are metabolically resistant to
weight loss (they exist – I am one of them due to an
autoimmune disease called Hashimoto’s thyroiditis) is
outlined in this book, with recipes and menu suggestions.
Q
Again, is the nutritional analysis available with each
recipe?
A Yes.
Q
Name some of the recipes that are your particular favorites
in this cookbook
A See the website and click on the book for a
complete listing of recipes. I have lots of favorites in
here, but they’re all great recipes really. Ginger Beer,
Chili Italian-style, Hamburger Soup, Mandarin Spinach
Salad, Apple Bacon Salad, Sesame Strawberry Salad, Taco
Salad, Caesar Salad, Barbo’s crepes, Create-a-flavor Mock
Danish, Jumbo Ricotta Pancake, Beef Stew, Cabbage Rolls,
Cheese Tacos, Apple Curry Meat Loaf, Sirloin Steak with
Lemon Parsley, Jamaican Drumsticks, Barbecue Chicken Pizza,
Chicken Curry, Chinese Lemon Chicken, Shrimp curry, Tuna
Pie with yogurt sauce, Salmon Almondine, Cauli-fried rice,
Mushroom Mozzarella Bake, Oven Zucchini Fries, Creamed Faux
Mashed Potatoes, Zucchini Fritters, Pepper Chunks and
Stewed Tomato, Deluxe Green Beans Almondine, Fried
Marinated Onions, Curry Powder, Lemon Ricotta Muffins,
Cheese Bread Sticks, Wholegrain Bread, Coconut Chocolate
Mousse, Linda’s Ice Cream Custard, Pound Cake, Black Forest
Cake, Cinnamon Kuchen with Butter Sauce, Chocolate Fudge
Cheesecake, Black Forest Cheesecake, Chocolate-Glazed

Peanut Butter ‘n Jelly Cookies, Gingersnaps, Candy Squares
and Chocolate Almond Biscotti. Phew! There you have it –
my favorites in this cookbook.
Book
3: Splendid Low-Carbing for Life, Vol. 1:
Q
What is special about this book?
A This book has some fabulous loaf and muffin
recipes and also contains a nut-free bake mix (cup-for-cup
substitution for white flour), in addition to the other
cup-for-cup bake mixes, that is great for folks who are
allergic to almonds/nuts. Pumpkin Spice Loaf and Cranberry
Orange Loaf are two loaves I still make ever so often. One
would never guess that they’re low-carb. The chocolate
peanut butter candy is quite addictive and my husband said
that the recipe alone was worth the price of the book! It
includes one of the best almond cookies (flourless) I have
ever made. The Mini Hot Chocolate Cakes are an elegant
dessert. My husband and son, Jonathan, rave about this
dessert – even just the memory of enjoying it, brings rave
reviews from them! My mother-in-law’s Spinach quiche is the
best quiche I have ever had. The Sirloin Steak in Butter
Sauce and the Bacon and Avocado Salad (super dressing!) is
as good as it gets!
NOTE: Book-3 is one of our
most popular cookbooks! If you have no idea which books to
choose, it makes sense to start with Book-3 and get my 2
subsequent books (below) as well.
Q
How low in carbs are the recipes?
A All the recipes in this book are less than 10
grams of carbs, while 64% are less than 5 grams and 43% are
less than 3 grams. All my books adhere to similar
stringent guidelines.
Q
Does this book contain the Low-Carb Bake Mix that is in the
Splendid Low-Carb Desserts cookbook?
A No. But it does have a fabulous “Vital Oat
Ultimate Bake Mix (a cup-for-cup substitution for white
flour and a nut-free bake mix). These are double the carbs
of the Splendid Low-Carb Bake Mix ™ found in Splendid Low-Carb
Desserts.
Q
Name your favorite recipe in this cookbook?
A I have too many favorites, to pick just one.
It’s a lovely cookbook! Check the website for a complete
listing of recipes contained within this book and each of
the others.
Book 4: Splendid Low-Carb Desserts:
Q
Why produce a book just addressing desserts, when people
are trying to lose weight?
A It is not really such a challenge to change
regular cooking recipes to low-carb, however, desserts do
pose a challenge for many people. It is not something I
would recommend one eat every day, however, it is not out
of line to have a treat on the weekend or if company comes
over or even to take to a coffee shop, where you will be
meeting a friend, who will indulge in a high-carb treat
before you. This book addresses the need for sweet,
comfort foods that will be required from time to time and
especially at times like special holidays.
Q
Would these desserts represent your cumulative knowledge on
baking low-carb?
A Absolutely! As time went by, I did learn more
and my desserts veered into relatively unchartered
territory, closely mimicking old favorites. Most often
these days, I make new desserts with successes usually
every time. Occasionally, I find the need to test a tricky
recipe 2 or 3 times, before I’m happy with it.
Q
What is special about this cookbook?
A It has my favorite bake mix (Splendid Low-Carb
Bake Mix ™), which practically guarantees a low-carb result
in your baking.
Q
What desserts are in the book?
A Basically, the same dessert and baking
categories as in all the other cookbooks, only more
desserts in each category.
Q
Are these quality dessert recipes that I can make and serve
to company without having to explain that they are low-carb?
A Yes. No longer do you need to feel that the
dessert you are serving will be sub-standard, simply
because it is lower in carbohydrates. Most of your guests
will never guess that the dessert is low-carb and
sugarless. If they do, they will no doubt be complimentary
of your culinary skills. Have fun with the recipes!
Book 5: Splendid Low-Carbing for
Life, Vol. 2
Q
This is the sequel to Splendid Low-Carbing for Life, Vol.
1. What is special about this book?
A The book has the breakthrough Biskmix ™, which
can be used to substitute for Bisquick in old favorite
recipes. (It also has the popular Splendid Low-Carb Bake
Mix ™). This cookbook has several lovely Biskmix recipes
to try. It has a fabulous thin and crispy pizza crust made
with oat flour as well as the Oat tortillas in it, the
lattice pie crust, and the Western Chinese cooking section.
The Chocolate Peanut Butter Cups are delicious!
Q
What does the nutritional analsyis statistics profile look
like?
A All recipes in this book are less than 10 g of
carbs per serving. 75% are less than 6 grams and 42% are
less than 3 grams.
Q
How successful is the Biskmix ™ in Bisquick recipes?
A It is extremely successful in most Bisquick
recipes, but do not try it in ones that use yeast and
cinnamon rolls are likely to be more biscuit-like. It
makes great cobbler and scones and biscotti. Cookies are
never dry. It is a very exciting breakthrough.
Q
What equipment is required to make the Biskmix ™?
A A good food processor with a sharp S-blade is
required, or otherwise a pastry cutter or your fingers to
rub in the butter.
Q
How should leftovers be stored?
A Leftovers can be stored at room temperature for
a week or so and then placed in the refrigerator or freezer
for longer storage.
Q
Are there suitable recipes for leftover Biskmix ™?
A Yes. A friend of mine has had success breading
pork steaks and eggplant with it. I make Cheese crackers
in the microwave oven; very tasty!

quite suitable for most low-carb diets, giving
us low-carbers instant access to many of the Splendid

and More Splendid Desserts FAQ's:
Q Who can benefit from

calories and 200 g carbs and 1 cup of Splenda Granular
has 100 calories and 24 g carbs.

and diabetic exchanges.
A More Splendid Desserts has both. The
diabetic Food Choice Values and symbols for each
recipe were assigned by Katherine Younker, PDt, CDE,

each recipe. Splendid Desserts has only the
nutritional analysis.
